Foxtail Millet Khichdi

Foxtail Millet Khichdi

Ingredients:

  • 1 cup The Millet Way Whole Unpolished Foxtail Millet
  • 1/2 cup split yellow lentils (moong dal)
  • 4 cups water
  • 1 tablespoon ghee or oil
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • Assorted vegetables (carrots, peas, cauliflower, etc.)
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions:

  • Rinse the Whole unpolished Foxtail Millet and split yellow lentils under cold water and drain.
  • In a pressure cooker, heat ghee or oil over medium heat. Add cumin seeds and allow them to splutter.
  • Add chopped onion and sauté until it turns golden brown.
  • Add assorted vegetables and sauté for a few minutes.
  • Add chopped tomato, turmeric powder, and salt. Cook until the tomatoes are soft.
  • Add rinsed Whole unpolished Foxtail Millet and split yellow lentils to the pressure cooker. Stir well to combine.
  • Pour water into the pressure cooker and mix everything together.
  • Close the pressure cooker lid and cook for 3-4 whistles or until the khichdi is cooked through.
  • Once the pressure releases, open the lid, fluff the khichdi with a fork, and garnish with fresh cilantro leaves before serving.
