Ingredients:
- 1 cup The Millet Way Whole Unpolished Foxtail Millet
- 1/2 cup split yellow lentils (moong dal)
- 4 cups water
- 1 tablespoon ghee or oil
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 onion, finely chopped
- 1 tomato, chopped
- Assorted vegetables (carrots, peas, cauliflower, etc.)
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions:
- Rinse the Whole unpolished Foxtail Millet and split yellow lentils under cold water and drain.
- In a pressure cooker, heat ghee or oil over medium heat. Add cumin seeds and allow them to splutter.
- Add chopped onion and sauté until it turns golden brown.
- Add assorted vegetables and sauté for a few minutes.
- Add chopped tomato, turmeric powder, and salt. Cook until the tomatoes are soft.
- Add rinsed Whole unpolished Foxtail Millet and split yellow lentils to the pressure cooker. Stir well to combine.
- Pour water into the pressure cooker and mix everything together.
- Close the pressure cooker lid and cook for 3-4 whistles or until the khichdi is cooked through.
- Once the pressure releases, open the lid, fluff the khichdi with a fork, and garnish with fresh cilantro leaves before serving.
