Ingredients:
- 1/2 cup of The Millet Way Whole Unpolished Foxtail Millet
- 1 cup water
- 1 cup cooked chickpeas (canned or boiled)
- 1/2 cup cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions:
- Rinse the Whole millet under cold water and drain.
- In a saucepan, bring water to a boil. Add the rinsed Whole millet and cook until tender, about 15-20 minutes. Drain any excess water and let it cool.
- In a large mixing bowl, combine cooked Whole millet, cooked chickpeas, cucumber, cherry tomatoes, red onion, and fresh parsley.
- In a small bowl, whisk together lemon juice, olive oil, ground cumin, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss until well combined.
- Serve the salad chilled or at room temperature. Enjoy!
