Millet and Chickpea Salad

Millet and Chickpea Salad

Ingredients:

  • 1/2 cup of The Millet Way Whole Unpolished Foxtail Millet
  • 1 cup water
  • 1 cup cooked chickpeas (canned or boiled)
  • 1/2 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:

  • Rinse the Whole millet under cold water and drain.
  • In a saucepan, bring water to a boil. Add the rinsed Whole millet and cook until tender, about 15-20 minutes. Drain any excess water and let it cool.
  • In a large mixing bowl, combine cooked Whole millet, cooked chickpeas, cucumber, cherry tomatoes, red onion, and fresh parsley.
  • In a small bowl, whisk together lemon juice, olive oil, ground cumin, salt, and pepper to make the dressing.
  • Pour the dressing over the salad and toss until well combined.
  • Serve the salad chilled or at room temperature. Enjoy!
